Quick & Easy Creamy Spinach Dip

INGREDIENTS:

16 oz Fresh spinach

8oz Non-fat plain Greek yogurt

1/4c Fresh dill (or 2Tbs dry)

2 Cloves garlic (or 2 tsp garlic powder)

2tsp Lemon juice 2tsp

Olive oil To taste Salt and pepper

DIRECTIONS:

Saute spinach in olive oil and set aside to cool. Mix remaining ingredients. Mix in spinach once cool.

Tip: Serve with fresh vegetables, or whole wheat crackers.

 

This healthy twist on an old favorite is full of protein, folates, fiber, and vitamins A, C, E, and K.
